We heard you. In conjunction with World Sake Day, we're bringing back sakes to our Bukit Timah store.


World Sake Day has been celebrated on October 1 since 1978. A date chosen by The Japan Sake Brewers Association to mark when most of the yearโ€™s rice has been harvested and breweries begin restarting production for the year.


From 12-2pm, Elliot Faber, Sake Samurai โ€” a real title bestowed by the Japan Sake Brewers Association Junior Council โ€” and founder of Sake Central will be conducting a sake tasting and talking about all things sake (or not). 


If you haven't yet got a copy of his book SAKE: The History, Stories and Craft of Japan's Artisanal Breweries then this is the moment to do so (and get it autographed too)


SAKE: The History, Stories and Craft of Japan's Artisanal Breweries is a compendium of the most important generational sake breweries in Japan, featuring profiles of and interviews with the passionate families who run these operations, along with luxurious photography of the small batch processes, landscape and people involved. Founded in 2017 by American expat Topher Boehm and Australian brother in law Chris Allen, Wildflower has quickly become a must-try Australian brewery. The Wildflower concept, and the beers they produce, is based on the methods of some of the great breweries of the Old World โ€“ in particular those around the Franco-Belgian border like Brasserie Thiriez โ€“ plus some of those on the cutting edge of the New World โ€“ such as Jester King from Texas and Londonโ€™s Partizan. AUTUMN ALE

WILDFLOWER X MOMENTO MORI COMMON GROUND AUTUMN ALE: HARVEST 2019

Origin: Marrickville, NSW, Australia
Vol: 750ml

This is the second edition of the ongoing collaboration between Wildflower and Dane and Hannah of Momento Mori wines. These beers are made without the addition of Wildflower's house culture and instead see uninoculated wort pitched on top of fermented, macerated, pressed grape skins from the making of their wines. This ale was made back in 2019 with the skins of Greco grapes which spent 10 months macerating to make MM's 'Give up the Ghost' 2019. After the skins were lightly pressed and sent to us, we pitched our Gold wort on top of them and allowed the yeast (which was somewhat surprisingly still active after all that time) to commence and complete the beer fermentation. The beer and skins soaked together for 10 months before bottling in October 2020 and conditioning for nearly two years before release. ABV is 6.1%.Undeniable salinity on the nose, oyster shell, tidal pool before the ripe fruit takes over.. fresh pineapple and white stone fruits. The skinsy herbal spice floats in the background. Laser-like palate, tight and direct but generous with flavour... pineapple again, melon and clean citrus. Long and persistent with a mouthwatering acidity. Grab some oysters.

WILDFLOWER HIVE: POST BROOD BLEND #5

Origin: Marrickville, NSW, Australia

Hive: Post Brood is an ongoing collaboration with our friends, and honey superstars Tim and Emma from Malfory's Gold honey. Hive: Post Brood is a barrel aged golden Australian Wild Ale refermented with natural formed Warrรฉ hive post-brood wild comb from the Blue Mountains and Central Tablelands of NSW. The Malfroy's Post Brood Polyflora is unlike any honey I have ever tasted and indeed a unique product. The beer is our aged Gold refermented and macerated on the left over comb, untreated or heated... just natural, after Timโ€™s milling and gravity straining of the post brood comb. He doesnโ€™t spin or press the comb, just let's time do its thing. But what happens is that there is still a bit of honey clinging to the waxy comb (along with all the other good propolis, bee bread and pollen). If you are interested in what Post Brood means and why the character is so unique, you can read a great description here written by Tim.

Each bottle is dipped in the same wax post-refermentation in this beer, there may be small residue still of propolis in the wax leaving black specks in the golden yellow (super aromatic BTW) beeswax.

This blend returns to the more spice-pine driven aromas of hive 1, 2, and 3... after the more floral, lighter #4, this batch of honeywax from Tim and Emma contained more Blue Mountains post brood material in it which lends the darker, more intense flavours.

WILDFLOWER HOW'S THE SERENITY BATCH #3

Inspired by one of our all time staff favourite beers, a certain Adelaide based sparkling ale, this is an arranged marriage of this certain wort with our house culture that has made for a match we love.

A sparkling Australian Wild Ale made with organic malted schooner barley (AU), organic black patent malt (AU), organic raw sugar (AU) and Pride of Ringwood hops (AU).

This third batch has a robust nose, pronounced hop character, woody and resinous. Earthy spices and gentle citrus lead to a mild funky finish. Full palate, round with weight and texture, brown spices and herbal notes before the bitterness drives through cleansing the palate wonderfully.

WILDFLOWER SPELT BEER BATCH #1

Origin: Marrickville, NSW, Australia

Back in January, I flagged that the keen observer of our beer would likely recognise a renewed focus on simplicity this year, a preference for elegance, sustenance and comfort. That and an emphasis on bitterness, which Iโ€™ve been desperately wanting.

Spelt Beer fits squarely in this vein. Mashed cool with organic malted Schooner barley and organic raw spelt from Woodstock Flour, boiled with a hefty dose of AU Pride of Ringwood and fermented with our house mixed culture derived entirely of native yeast and bacteria found on native flowers in NSW. Aged in stainless and left for a healthy few months of bottle maturation before release. Once we can source organic hops consistently, Spelt Beer with be Organic Spelt Beer as every other element of this ferment is certified. Spelt is spicy, earthy and grainyโ€ฆ enhancing a crispness that I want in beer. 

The result at release is all grains and hopโ€ฆ earthy and rustic, cut grass and tilled earth, bready and spicy with a whiff of funk. Old citrus floats around at the periphery. A dry and refreshing palate.

WILDFLOWER ST THOMAS 2022

In 2022, St Thomas was made by blending barrel aged amber mixed culture fermentation ale with 748kg of fresh, whole, tree ripened stemmed and destemmed Morello sour cherries from Thornbrook Orchard in Nashdale, NSW. Cellared for 3 years.

Sweet perfumed cherry nose with a floral rose petal lift. Savoury cherry pie, cola, toasted spices and biscuity oak give wonderful complexity alongside a gentle minty note. Plump ripe red fruits upfront before a rich rounded malt driven mid palate that is full of cooking spices and texture. Wonderfully seamless and integrated with a beautifully balanced acidity.

WILDFLOWER ST PHOEBE 2021

St Phoebe is an Australian Wild Ale made with plums.In 2021, St Phoebe was made by blending barrel aged golden mixed culture fermentation ale with 996kg of fresh, tree ripened Ebony Sun plums hand picked from Thornbrook Orchard in Nashdale, NSW.The 2021 edition of St Phoebe was made in a similar manner to the other stonefruit beers (Thomas, Henry and Abigail) whereby Wildflower source and macerate whole, real fruit from Nashdale with barrel ripened Gold from the cellar. This year, the beer had a whole six months to hang out with these plums and soak up every last bit of their sweet plummy goodness before being blended and bottled in October 2021. The beer went through its ultimate fermentation in bottle for carbonation and conditioning for 4 months before its now release.

Tom Lubbe, the mastermind behind Matassa, brings us another absolute highlight, the Matassa - Orange Blossom Blanc: Flowery with a hint of orange blossoms. Delicate tannins to melt away. Shows why we consider Tom to be one of the best, if not the best, when it comes to orange wine in France!

The label actually says it all. With the picture in your head, you immediately associate the gifts with a sea of flowers in your head. The wine is still not perfumed or sweet, but crisp!

It is best to give the wine at least 30 minutes in the decanter.

MATASSA BRUTAL ROUGE 2021

Origin: Cรดtes de Roussillon, Languedoc, France
Grape: Syrah, Grenache, Muscat Blanc

Whole-cluster, four-day macerated Syrah, Grenache and Muscat Blanc. All fruit is lightly trodden, so about 50% of the red and white grapes co-ferment together by the end. It is then squeezed into fibreglass and concrete to ferment and age the wine.

GRAPE REPUBLIC ROSATO 2020

Origin: Yamagata, Japan
Grapes: Steuben, Delaware, Niagara, Rosary Bianco
Practices: Organic

A bit on here. Steuben is divided into two parts; one is destemmed and left on skins for 6 days, the other only sees a light maceration. The Niagara and Rosario Bianco are blended and fermented together in amphora. And finally, the Delaware also sees 12 hours skin contact. All is blended and then aged in stainless steel tank. A charming rosรฉ with impressive freshness and balanced acidity.

Grape Republic was founded by restaurateur and sommelier Kazuomi Fujimaki in 2015 who up and moved from Tokyo to the village of Shinden in Yamagata. With no previous experience in winemaking - he set three simple rules for himself: The cultivation must be organic, the wines must be made without sulphur and other additives, and they should preferably have a touch of amphora storage. The goal was to make live and clear Japanese wines in free style using the grapes grown in Yamagata's orchards throughout the 20th century.

Using locally foraged wild yeast and bacteria from NSW, and their own mixed house culture of brewers yeast, Wildflower creates balanced, tart and funky beers that are locationally unique. AUTUMN ALE WILDFLOWER X MOMENTO MORI COMMON GROUND AUTUMN ALE: HARVEST 2019 Origin: Marrickville, NSW, Australia Vol: 750ml This is the second edition of the ongoing collaboration between Wildflower and Dane and Hannah of Momento Mori wines. These beers are made without the addition of Wildflower's house culture and instead see uninoculated wort pitched on top of fermented, macerated, pressed grape skins from the making of their wines. This ale was made back in 2019 with the skins of Greco grapes which spent 10 months macerating to make MM's 'Give up the Ghost' 2019. After the skins were lightly pressed and sent to us, we pitched our Gold wort on top of them and allowed the yeast (which was somewhat surprisingly still active after all that time) to commence and complete the beer fermentation. The beer and skins soaked together for 10 months before bottling in October 2020 and conditioning for nearly two years before release. ABV is 6.1%.Undeniable salinity on the nose, oyster shell, tidal pool before the ripe fruit takes over.. fresh pineapple and white stone fruits. The skinsy herbal spice floats in the background. Laser-like palate, tight and direct but generous with flavour... pineapple again, melon and clean citrus. Long and persistent with a mouthwatering acidity. Grab some oysters. $45.00ย  Shop now WILDFLOWER HIVE: POST BROOD BLEND #5 Origin: Marrickville, NSW, Australia Vol: 750ml Hive: Post Brood is an ongoing collaboration with our friends, and honey superstars Tim and Emma from Malfory's Gold honey. Hive: Post Brood is a barrel aged golden Australian Wild Ale refermented with natural formed Warrรฉ hive post-brood wild comb from the Blue Mountains and Central Tablelands of NSW. The Malfroy's Post Brood Polyflora is unlike any honey I have ever tasted and indeed a unique product. The beer is our aged Gold refermented and macerated on the left over comb, untreated or heated... just natural, after Timโ€™s milling and gravity straining of the post brood comb. He doesnโ€™t spin or press the comb, just let's time do its thing. But what happens is that there is still a bit of honey clinging to the waxy comb (along with all the other good propolis, bee bread and pollen). If you are interested in what Post Brood means and why the character is so unique, you can read a great description here written by Tim. Each bottle is dipped in the same wax post-refermentation in this beer, there may be small residue still of propolis in the wax leaving black specks in the golden yellow (super aromatic BTW) beeswax. This blend returns to the more spice-pine driven aromas of hive 1, 2, and 3... after the more floral, lighter #4, this batch of honeywax from Tim and Emma contained more Blue Mountains post brood material in it which lends the darker, more intense flavours. $42.00ย  Shop now WILDFLOWER HOW'S THE SERENITY BATCH #3 Origin: Marrickville, NSW, Australia Vol: 750ml Inspired by one of our all time staff favourite beers, a certain Adelaide based sparkling ale, this is an arranged marriage of this certain wort with our house culture that has made for a match we love. A sparkling Australian Wild Ale made with organic malted schooner barley (AU), organic black patent malt (AU), organic raw sugar (AU) and Pride of Ringwood hops (AU). This third batch has a robust nose, pronounced hop character, woody and resinous. Earthy spices and gentle citrus lead to a mild funky finish. Full palate, round with weight and texture, brown spices and herbal notes before the bitterness drives through cleansing the palate wonderfully. $36.50ย  Shop now WILDFLOWER SPELT BEER BATCH #1 Origin: Marrickville, NSW, Australia Vol: 750ml Back in January, I flagged that the keen observer of our beer would likely recognise a renewed focus on simplicity this year, a preference for elegance, sustenance and comfort. That and an emphasis on bitterness, which Iโ€™ve been desperately wanting. Spelt Beer fits squarely in this vein. Mashed cool with organic malted Schooner barley and organic raw spelt from Woodstock Flour, boiled with a hefty dose of AU Pride of Ringwood and fermented with our house mixed culture derived entirely of native yeast and bacteria found on native flowers in NSW. Aged in stainless and left for a healthy few months of bottle maturation before release. Once we can source organic hops consistently, Spelt Beer with be Organic Spelt Beer as every other element of this ferment is certified. Spelt is spicy, earthy and grainyโ€ฆ enhancing a crispness that I want in beer.ย  The result at release is all grains and hopโ€ฆ earthy and rustic, cut grass and tilled earth, bready and spicy with a whiff of funk. Old citrus floats around at the periphery. Cellared for 3 years. Sweet perfumed cherry nose with a floral rose petal lift. Savoury cherry pie, cola, toasted spices and biscuity oak give wonderful complexity alongside a gentle minty note. Plump ripe red fruits upfront before a rich rounded malt driven mid palate that is full of cooking spices and texture. Wonderfully seamless and integrated with a beautifully balanced acidity. $46.50ย  Shop now WILDFLOWER ST PHOEBE 2021 ORIGIN: Australia ABV: 5.8% VOL: 750ml St Phoebe is an Australian Wild Ale made with plums.In 2021, St Phoebe was made by blending barrel aged golden mixed culture fermentation ale with 996kg of fresh, tree ripened Ebony Sun plums hand picked from Thornbrook Orchard in Nashdale, NSW.The 2021 edition of St Phoebe was made in a similar manner to the other stonefruit beers (Thomas, Henry and Abigail) whereby Wildflower source and macerate whole, real fruit from Nashdale with barrel ripened Gold from the cellar. This year, the beer had a whole six months to hang out with these plums and soak up every last bit of their sweet plummy goodness before being blended and bottled in October 2021. Delicate tannins to melt away. Shows why we consider Tom to be one of the best, if not the best, when it comes to orange wine in France! The label actually says it all. All fruit is lightly trodden, so about 50% of the red and white grapes co-ferment together by the end. It is then squeezed into fibreglass and concrete to ferment and age the wine. $115.00ย  Shop now GRAPE REPUBLIC ROSATO 2020 Origin: Yamagata, Japan Grapes: Steuben, Delaware, Niagara, Rosary Bianco Practices: Organic A bit on here. Steuben is divided into two parts; one is destemmed and left on skins for 6 days, the other only sees a light maceration. The Niagara and Rosario Bianco are blended and fermented together in amphora. And finally, the Delaware also sees 12 hours skin contact. All is blended and then aged in stainless steel tank. A charming rosรฉ with impressive freshness and balanced acidity. Grape Republic was founded by restaurateur and sommelier Kazuomi Fujimaki in 2015 who up and moved from Tokyo to the village of Shinden in Yamagata. With no previous experience in winemaking - he set three simple rules for himself: The cultivation must be organic, the wines must be made without sulphur and other additives, and they should preferably have a touch of amphora storage.
