About Tatsumi Distillery
Japan's first small crafted distillery located in Gujo-Hachiman, Gifu Prefecture. The Tatsumi Distillery started operating in 2017
and runs as a one-man operation even today. It is named after the owner himself, Mr. Tatsumi, who traveled to 30 different
countries, visited more than 700 different alcohol makers before opening his own distillery. Each release has its own distinctive
taste distilled straight from ingredients selected by Mr. Tatsumi. Every single drop is hand-crafted by the man himself with his
passion and love for alcohol. A true modern "Alchemist". He utilises the famous Kabutogama still, and only makes small batches of
less than 500 bottles for consistency.
Tatsumi Gin
The Tatsumi Distillery Gin is made with simply one botanical - juniper berry. The Juniper is sourced from northern Macedonia and
is some of the best available in the market.The Gin is distilled from two different Shochu bases, Sake Lees Shochu & Chicory
Shochu. Woody like coniferous tree, hint of scent of citrus, perfume (fruity similar to Ginjo-Sake). On the palate clear juniper
berry, very pleasantly spicy, after taste has a complexity and richness from the base spirits.
Tatsumi Absinthe
An incredible Japanese craft absinthe. Made by Tatsumi-san by hand on his own.The Tatsumi Distillery Absinthe is made with 8
botanicals. Wormwood is the main ingredient along with anise. The Wormwood is sourced from a grower in Yamagata prefecture. The
Absinthe is distilled from two different Shochu bases, Sweet Potato Shochu & Chicory Shochu. Sweet note from sweet potato Shochu
with wormwood and anise. The palate has a milky sweetness from liquorice, incredibly clean and balanced complex aftertaste.

Sunday's are better than others! We'll be serving highballs with Sunday's Spirits and everything in our chillers. Our friends from
Providog will be giving out complimentary doggy meatballs and ice cream. Bring your pooches and camping chairs for a day out in
the sun. No booking is needed.
About Sunday's Whisky
The philosophy behind Sunday’s Spirits is to demystify and remove the intimidation of Japanese whisky and shochu with high-quality
products that are approachable and accessible to anyone and everyone.Collaborating with Sasanokawa Shuzo, barrel-aged malt and
grain spirits from around the world are selected and subsequently mixed with Japanese Whisky and blended with the purest water
from the springs of Koriyama. The barrels selected for maturation are largely ex-Bourbon casks which offer a round and mellow
influence to the final product.A true everyday whisky, inspired by the cult whiskies produced by Suntory and Nikka, Sunday's NAS
is a mellow and well balanced whisky that can be enjoyed on its own or in cocktails; particularly in an Old Fashioned, a Whisky
Lemonade, or as the perfect base of a highball, Sunday’s Hi.
