It's almost time for one of my favorite holidays - Saint Patricks Day!

I grew up in a VERY proud Irish family from Cork (city), and being Irish has always been a huge source of pride for our family. Plus, it's the day before my birthday, so I like to think of it as just a little bit more celebrating and fun!

I've visited Ireland a couple of times and love the country - and while it's not known for it's food, it should be. From the seafood (their fresh fish is UNREAL!), produce, allll the cheese, and meat - Irish food is seriously underrated.

This collection of recipes aren't all authentic Irish, some are just green-themed, but they will all make you smile!
