FINCA LA SALSA
This coffee comes from Benjamins farm, Finca La Salsa, which is a joint venture with his friends and neighbours, Miguel and Dolmin Moreno. Together, and with the skilled care and love of their farm workers, they produced a coffee that scored 90.07 in the 2021 Honduras Cup of Excellence, enough to place 5th and earn them a coveted Presidential Award.
The double anaerobic washed process involves a 48 hour and a 72 hour ferment, which introduces layers of complexity and texture.
While terroir can play a huge role in the flavours and characteristics, varitety gentics and specific clones make a huge difference as well. That's why THIS GEISHA is a step above others - Ben's Geisha trees have direct lineage to those trees grown by the best farmers in Panama... aka gold standard, grand cru level Geisha clones.
Benjamin attributes the success of this coffee to three things: excellent soil and microclimate in El Cedral, the inherent cup qualities of the Geisha varietal, and the effort and care of the highly skilled workers.
