The summer weather is in full swing here in Chicagoland!! With record high temperatures and crazy humidity it’s only natural that we want to eat food that’s a little cooler and lighter. That’s why this week I want to highlight some of our delicious side dishes. These dishes pack a lot of flavor despite their smaller size. They’re perfect for a quick, light lunch that won’t weigh you down during the long work day. Also, they are best when enjoyed cold - just what’s needed for this weather.
Spicy Almond Pad Thai Zoodles
This dish uses summer squash and carrots to make gluten-free noodles that are light, fresh, and crispy. We toss in more crunchy veg in the form of cucumbers, radishes, and bean sprouts. Fresh herbs such as cilantro and Thai basil amp up the flavor! But of course, the spicy almond butter sauce is what makes the dish. Rice vinegar, lime juice, dates, coconut aminos, and chili flakes help make up the sour, sweet, salty, and spicy components of this perfect sauce that cannot be beat in my book!
Spicy Korean Sesame Tofu
I could rave on and on about our tofu dishes (and I have in past newsletters!), so I’ll keep this one short and sweet. If you haven’t tried our Spicy Korean Sesame Tofu by now, you simply must! Crunchy veggies, fresh herbs, and organic non-GMO Phoenix Bean tofu artfully combined in a sweet, sour, and spicy gochujang sauce. It can be eaten as a stand alone dish or invented into something new like a rice bowl, wrap, or sushi roll. This is one of my favorites!
Curry Chicken Salad
A fun take on the traditional chicken salad! This side dish uses our pasture raised chicken as a base. We then mix in crunchy and tangy pickled carrots and red onions. Quinoa adds some bulk to this side dish while cashews add a perfect nuttiness. It’s all complimented by the sweetness of the raisins we’ve thrown in, too! The cashew-curry vinaigrette coats it all in a delicious mix of spices.
