BAKE OF THE WEEK CARROT CAKE CHEESECAKE DAVID TAMARKIN Editorial Director When my colleague Molly Marzalek-Kelly told me she was working on a Carrot Cake Cheesecake, at first I didn't get it. Everybody loves a mash-up, sure (I'm looking at you, Brownie Cookies). But why these two cakes? It took me a minute to understand the connection: Carrot cake goes with cream cheese frosting. Cheesecake is made from cream cheese! So, it turns out these two cakes have a natural affinity for each other. Yet I was unprepared for just how great this mash-up would taste (and look). Each gorgeously-swirled slice achieves a perfect balance: the richness of the vanilla bean-speckled cheesecake is offset by the robustly-spiced carrot cake. I typically can't finish an entire slice of cheesecake, but of this cheesecake, I had seconds. And it was then, halfway through my second slice, that I knew this cake was meant to be.
