Wine 101 ⬇️ Wine has been around since the days of the ancient Greeks holding court in Athens and telling tales of Zeus and Aphrodite. Back then, they didn’t make wines with any additives, simply because they didn’t have any to add! With modern advancements in wine, we now have the shiny product enjoyed today! One of those advancements is the use of sulphur in the vineyard and in the winery. While advancements in technology make our lives easier and just like it is now really easy to order that air purifier you didn’t even know you needed, wine is now easier to make than ever. Surely sometimes you miss when life was a bit simpler, so thankfully low preservative wine is here to take you back to simpler times, with or without your purified air. Bottle of the Week i ASHTON WINERY 2020 PINOTAGE 🦓 Ashton Winery Pinotage 2020 Howzit! Let’s zoom in on Stellenbosch for a change and discover Ashton Winery’s 2020 Pinotage. My friend, did you know Pinotage accounts for just 6% of vines planted in South Africa? And yet it is to South Africa, what Shiraz is to Australia – the honorary flag-bearing variety. For the uninitiated, Pinotage is the love child of Pinot Noir x Cinsault; yet somehow, it's closer to the spicy Shiraz in style than ethereal Pinot Noir. Toasty oak, bold dark notes of plum, chocolate-covered cherries, and a (unique) hint of mocha makes it a better match with smoky South African ‘braai’ than delicate duck… though we wouldn’t rule it out! Ashton Winery lies between the flowing Breede River and the foothills of the Langeberg. For generations, Ashton Winery has been blessed with soils of clay, loam and the coarse Karoo gravel, and a cool, dry climate that lends itself to sustainable viticultural practices. Pure varietal character and exceptional value makes this wine an absolute must for intrepid wine drinkers! Baie lekker! Grape of the Week 🧑🏻‍❤️‍💋‍🧑🏼 ⚡️ TL:DR: Famous hybrid variety made from Pinot Noir and Cinsault. A crossing borne out of necessity to adapt to the warmer climate and unique geology of South Africa. Delicious but more brooding and smoky. 💬 Pronounced: "pee-noh taj" 🌈 Colour: Red 🍇 What is it? Scientist Abraham Perold recognised Pinot Noir’s fickle behaviour, if it struggled at home in Burgundy, it would certainly wave its white flag in sunny South Africa. Perold also noted Cinsault’s vigour throughout the cape! Thus it became Perold’s mission to create a wine that was as delicious as Pinot Noir but grew as well as Cinsault! Pinot Noir x Cinsault (aka. Hermitage) = Pinotage! Much more appealing than Herminoire or worse Pinot-hermit – an image perhaps too evocative of cynical Pinot Noir fans! To Perold’s delight, the sum of each part wasn’t quite Pinot Noir or Cinsault but something completely new and delicious in its own right. Pinotage has a unique smoky, almost rubbery aroma that becomes a heady and attractive perfume when handled right. It is balanced by redolent dark plums, mulberry and piquant raspberry, backed by cocoa and sweet tobacco flavour. It doesn’t mind a bit of oak too. 📍Place of Origin: Created by Dr. Abraham Perold in 1925 at Stellenbosch University, South Africa 🌎 Today's Major Countries of Production: South Africa - Stellenbosch, Paarl, Wellington. Some in NZ and Israel. 🍕 Pairing Tip: It's well known that local wines work best with local food, so when we look to South Africa, the main cooking style is the braai or BBQ! It just so happens that smoky Pinotage wines work wonderfully with smoky, charry food straight off the BBQ - so try grilled sausages, kebabs, charred vegetables and slow-cooked meat. Or snack and sip with biltong! 🤔 Interesting to Note: Like the plot of a superhero film, in the 1920s scientists around the wine world were compelled to design ‘super’(soldier) varieties resistant to pests and diseases such as phylloxera, mildew and also warmer climates. As a result, we have Austrian Zweigelt, German Scheurebe and South African Pinotage! Pinotage forever! Wine News 💄 Top Canadian Winery has a Makeover! The Okanagan Crush Pad team has done a fabulous job over the years of firmly establishing itself as one of the biggest names in the Canadian wine scene. Now the team have decided to reinvent themselves, renaming their brand to Haywire Winery (the Haywire is/was actually the name of arguably their most famous line of wines).  Recipe of the Week 🥧 Venison Puff Pastry Pie The saltiness from bacon, earthiness from mushrooms, the gamey, meaty character from the Venison… all covered and wrapped up in a fabulous puff pastry blanket.
