🇮🇹 An Easy Guide to Italian Wine
"Un pasto senza vino e’ come un giorno senza sole.”
This Italian saying translates to “A meal without wine is like a day without sun,” and sums up the Italian approach to food and
wine. They do this best with their regional cuisine always managing to pair perfectly with their local wines.
This harmony between food and wine didn’t happen overnight, the Italians have been doing it since before the Roman Empire and to
get a true understanding of their way of life that revolves around the kitchen, you must first understand the background of the
country. So, crack open a bottle, tuck into some food and start reading this helpful guide.

🖋 Minimum Wines 'Of Another World' Syrah 2020
Matt and Lentil Pubrick are everything everywhere all at once! Together they are gardeners, farmers, writers, poets, educators,
AND winemakers. But let’s zoom in on the winemaking, specifically the very limited Minimum ‘Of Another World’ Syrah.
For Matt and Lentil, the healthier the soil, the healthier the vines get, and the better the fruit character = better wine! Over
the years, the duo have lovingly (painstakingly) converted their 125-acre vineyard to certified organic in Goulburn Valley,
Central Victoria. They practice regenerative farming here, without chems or pesticides, and the quality is well on display in
their wines.
This short-run of 100% Syrah is a light/medium velvety, bright red with a hint of gum leaf, followed by brambly dark fruit, spice,
and drying tannins that weave together in poetic harmony. Essential drinking this festive season, but be quick!

full-bodied, T rich and highly aromatic white wine!
🍐 Roussanne
⚡️ TL:DR: A herbal, floral wine that takes on plenty of richness as it ages.
💬 Pronounced: "roo-sahn”
🌈 Colour: White
🍇 What is it? A relatively rare herbal and floral white often blended with its sisters Marsanne and Viognier; it’s one of
thirteen varieties permitted in red wines from Châteauneuf-du-Pape in Southern Rhone.
In its youth, Roussanne has lifted botanicals with stone fruit, nuts, baked bread, and spice. On the palate, there is opulent
chamomile, fennel, white peach and pear, and mineral-driven acidity. With its higher natural acidity, Roussanne is known to age
well into 15 to 20 years! Aged Roussanne becomes more complex with dried apricots, honeyed richness, nutty characters, and hints
of beeswax.
The best and most famous (definitely most $$) instance of Roussanne are Marsanne Roussane blends by M. Chapoutier and M. Domaine
Jean-Louis Chave from the Hermitage region. But you’d sooner find these in an auction house than your local bottle-o!

🍕 Pairing Tip: Young Roussanne is a wonderful match with freshly picked crab or lobster rolls, and for the more intense, richer
and older - or oak-aged - versions, more complex dishes like salmon pâté, fillet of sole meunière or roast chicken (and gravy made
with a splash of the wine while you’re cooking) would be a total dream!
🤔 Interesting to Note: Roussanne was originally planted in central Victoria, Australia as far back as the mid 1800’s and
continues being produced today!

🍇 Quality Riesling? Next stop, Italy!
Italy isn't the first place one would think of when it comes to Riesling. Having said that, if you twisted our arm, then we’d
probably look at Alto Adige or a neighbouring region at the country’s northernmost limits. But not anymore! Reports coming out of
Lombardy’s Oltrepò Pavese suggest that a few producers are making some of the Italy's most vibrant racy styles of Riesling to date

🥘 Cheese-Stuffed Crispy Lemon Chicken Breasts
Cheesy chicken, yes please! There is a lot going on in this dish, so when it comes to pairing we could go down a number of wine
roads to pair up with this one. Cheesy goodness from the mozzarella, herbal notes from basil, citrus lift from lemon zest and a
lovely salty umami tang form those sun-dried tomatoes! Check it!
