But not the boring kind, more just about timeless style - you just know a good thing so why mess with it? The Garagiste 'Cuvée de Coeur' 2018 is your perfect festive fizz. Widely regarded as one of the bonafide rising stars of Australia’s Mornington Peninsula, Garagiste - run by the ever-innovative Barnaby Flanders - has picked up a dedicated army of followers across the past few years. And this rich and textured Blanc de Noirs made from 100% Pinot Noir makes it easy to see why.  This is a traditional method sparkling — made using the same method as they do in Champagne — with all the grapes coming from Barney’s home block in Merricks. A delicious and elegant start to any celebration, needless to say, the Henriot Brut Souverain is the most historical cuvée of the house. It enchants with gorgeous citrus and white blossom aromas balanced by notes of pastry and brioche.
