Our summer international honey spotlight series continues, with a curious honey from Italy: Mieli Thun’s Dandelion Honey.
ABOUT DANDELION HONEY
Dandelion honey, known as Tarassaco Honey in Italy, is one of our funkiest honeys. Producer Mieli Thun describes Dandelion Honey
as a Dr. Jekyll and Mr. Hyde experience because the scent and flavor differ in a very unexpected way. The aroma is a bit pungent
with notes of cheese, sulfur, and hay. The taste, however, is quite pleasant and moderately sweet.
Dandelion Honey comes from the mountain valley region of Northern Italy after the bees visit the wild dandelion fields.

ABOUT MIELI THUN
Mieli Thun is a family-run beekeeping operation located in Italy’s Non Valley. They specialize in nomadic honeys, which means the
beekeepers relocate their bees throughout the year to specially-selected sites around Italy where they can count on the density of
specific blooms that result in the delicious pure monofloral honeys they are known for.
They also operate from a place of great respect for mother nature, and we are proud to carry several of their honeys.
The peaceful the relationship between beekeeper and bee is not harsh or cruel. Beekeeping is one of those rare human examples of
eating or using an animal product without eating the animal itself. It is instead a symbiotic relationship, of mutual benefit: the
beekeeper defends them against their enemies, diseases and the cold, and provides them with abundant blooms nearby. They repay him

DANDELION HONEY PAIRINGS
Dandelion Honey is an excellent culinary aid, as it pairs well with many dishes including bitter leafy greens like endive and
escarole or meats for roasting and grilling.
Dandelion honey has a cheese note to it. I mix it onto mashed potatoes to make delicious au gratin potatoes. - QUEEN BEE JILLIAN
