It’s been 8 (8!) years since we first met Camille Becerra, and in the interim, life has sung a lot of harmony for the New York chef & restauranteur. Alongside her partnership in NY’s As You Are, the all-day cafe inside Downtown Brooklyn’s Ace Hotel, this summer Camille released her first cookbook, Bright Cooking, an ode to the vibrancy of taste in all its forms.
Between a season of travels, book releases, and cooking, we caught up with Camille for a candid and conversation, exploring how the possibilities of flavor give way to creative expression and soulful nourishment.

What is the idea behind Bright Cooking?
The book stems from my career as a restaurant cook and chef. I would often get asked how I develop a dish…is it just threw something on the wall and see what sticks. This is a way of sharing notes on my process: The first part, “Elements,” includes all my favorite salts, broths, bases, and flourishes. The second part is developed guide to how I incorporate those elements into dishes. Overall, it’s an invitation to have a reader determine their own approach to sauces or what ingredients they have on hand…and then develop an approach in making it their own.
In what places/ways do you find or reclaim vibrance and brightness in your own life?
Travel. Friendships. And always having constant human interactions with all walks of life.
How are you currently relating to your own sense of self?
The sense of self is understanding what makes you feel the best. For me it’s taking care of my mind and body.
