 BANANA BREAD Banana bread lends itself perfectly to plant-based baking because of the natural sweetness and texture of ripe bananas, requiring no eggs or dairy to produce a fluffy, perfectly sweet treat!
WHAT YOU NEED Flax meal 4 cup Water 374 cup Unbleached, all-purpose flour 3 72 cups Baking soda 2 tsps Baking powder 2 tsps Salt 2 tsp Cinnamon 2 tsps Banana 6 Coconut oil 23 cup Maple syrup 23 cup Unsweetened applesauce 4 cup Vanilla extract 2 tsps Coconut sugar 2s cup Optional Nutmeg '2 tsp Dairy-free chocolate chips to taste Walnuts to taste
 HOW TO MAKE 1.Preheat the oven to 350F 177C. 2.Mix together ground flax seeds and water and set aside. 3.1n a medium bowl, mix together dry ingredients flour, sugar, baking soda, salt, cinnamon, nutmeg if using. 4.In a separate bowl, mash up your bananas well with a fork. Then, add the rest of the wet ingredients melted coconut oil, maple syrup, applesauce, vanilla extract, flax eggs. 5.Pour wet ingredients into dry ingredients and stir with a spatula until just combined. Stir in optional add-ins chocolate chips, walnuts, pecans, or other nutsseeds you like!. 6.Line a loaf pan with parchment paper or grease with coconut oil. Pour the batter into the loaf pan and sprinkle with extra toppings if you wish. 7.Bake for 60 minutes, or until a toothpick comes out clean. Let cool at least 15 minutes before slicing. Enjoy! Notes: 1.You can use any other granulated sugar instead of coconut sugar. 2.This banana bread freezes well, just slice it and store in an air-tight container!
**For best results, scale your recipe to 1 serving to make a full banana bread loaf using a 9 x 5 loaf pan. This way, you'll have tasty banana bread to last you throughout the week!
